Spend a delicious, fun afternoon with Holistic Chef and Health Coach Susan Garth, as she shows how to bring the fresh flavors of the garden straight to your plate! A professional chef trained in the art of Macrobiotics, Susan combines her passion for healthy cooking, fresh plant-based recipes and mouth-watering flavors, to create a memorable menu that you can recreate for your family at home! A menu of flavorful favorites that even your kids will love and ask for!
Held in the spacious and beautiful Franklin Square Market Teaching Kitchen, not only will you learn some of Susan's special secrets, but you'll also be treated to a delicious four-course meal that you learned to make!

Appetizer:
Red Lentil Spread with Pita Toasts
- Move over Hummus, there's a new spread in town! Susan shares her tips for making this delicious and healthy appetizer that puts a new spin on a beloved favorite!
First Course:
Tri-Quinoa Tabouli
- Susan will demonstrate how to make this fresh and vibrant twist on the traditional Middle Eastern salad. She reveals her techniques, that allow the tart and savory flavors to meld into a tasty dish that you won't soon forget.
- Susan will also discuss additions and alternatives, to take advantage of the freshest, seasonal ingredients.
Main Course:
Springtime Spinach Salad with blanched asparagus, shaved radish, and toasted almonds
Dijon Shallot Vinaigrette
Topped with Sliced Grilled Chicken Breast
- Susan will show how to prepare the Spinach Salad, the fresh foundation for the main course. She will demonstrate how to blanche the asparagus, and shave the radishes to perfection. Susan will also show how to whip up the vinaigrette dressing, flawlessly!
- The salad will be topped with sliced, grilled chicken, which the class will then be able to enjoy!
- Susan will also share tips and suggestions for any additions or alternatives that you can do, to make the dish your own!
Dessert:
Mixed Berry Crumble with Oat-Einkorn Topping
- Then sit back and enjoy a delicious, healthy dessert to top it all off!
- But what is Einkorn, you might be asking? Susan will introduce the class to the oldest known wheat in the world! A hardy ancient grain with a nutty flavor, it is more nutritious than modern wheat, with higher protein and more antioxidants. Now you are in the know!

Susan is a professional chef, who specializes in holistic cuisine, utilizing the freshest, most delicious ingredients available. She holds a certification in Metabolic Typing, the personalized approach to nutrition, matching an individual's metabolic rate to a diet that optimizes their energy, weight and health. Susan received her formal training at the Kushi Institute in Becket Massachusetts and at The Living Proof Institute, in Ontario, Canada.
Susan has shared her passion for natural cooking with private clients for over 30 years, in a career that has taken her coast to coast. Her clients include an "A- list" of celebrities in the sports, entertainment and corporate worlds. She has opened restaurants, catered public and private events and demonstrated her natural cooking secrets with many, through her popular cooking classes.
Susan's culinary inspirations span the globe, thanks to her world travels. Along with three different stints in the Big Apple, Susan spent a total of nine years in beautiful Santa Barbara, California. She also lived in Europe, where she honed her international palate with tasty trips across the Continent. Her travels have also taken her South of the Border, to Mexico, where she learned some spicy, new takes on beloved Mexican favorites.
As a holistic chef and health coach, Susan empowers her clients to create new habits for long lasting results on and off the scale, while reducing risk factors for disease. Susan's approach works by getting back to basics, and bringing the body back into balance with delicious foods, lifestyle tweaks, and having fun!
