Cookin' It Up: Garden To Table!
Spend a fun and delicious afternoon with Vegetarian Chef Caitlin Parwana, as she shows how to bring the fresh flavors of the garden straight to your plate! A vegetarian for nearly three decades, and an accomplished chef and baker, Caitlin combines her passion for healthy cooking with her love of all things green!
Caitlin has shared that passion with patrons for more than a decade, as a chef at Four Seasons Natural Foods, Saratoga’s OG independent health food store! A registered yoga teacher as well, Caitlin has been sharing her expertise in healthy living, eating and moving for more than two decades in Saratoga County.
Now Caitlin can inspire you too!
Held in the spacious and beautiful Franklin Square Market Teaching Kitchen, not only will you learn some of Caitlin’s special secrets, but you'll also be treated to a delicious four-course meal that you learned to make!
And garden to table it will be! Fresh produce for the meal will be sourced from Saratoga Springs' own Pitney Meadows Community Farm, as availability allows! Located on preserved farmland in the heart of the city, the nonprofit community farm promotes healthy eating with its community gardens, educational workshops and abundant farm stand that is open to all!
Admission includes the meal below, plus a complimentary cocktail or mocktail of your choice!

MENU:
Appetizer:
Red Lentil Spread with Pita Toasts
- Move over Hummus, there's a new spread in town! Caitlin shares her tips for making this delicious and healthy appetizer that puts a new spin on a beloved favorite!
First Course:
Tri-Quinoa Tabouli
- Caitlin will demonstrate how to make this fresh and vibrant twist on the traditional Middle Eastern salad. She reveals her techniques, that allow the tart and savory flavors to meld into a tasty dish that you won't soon forget!
Main Course:
Spring Salad with mixed greens, poached asparagus, radishes & toasted almonds
Dijon Shallot Dressing
Topped with Lemon Dijon Marinated Baked Tofu
And Sliced, Grilled Chicken Breasts
- Caitlin will show how to prepare the Spring Salad, the fresh foundation for the main course. She will demonstrate how to poach the asparagus, and whip up the vinaigrette dressing, flawlessly!
- Caitlin will also share her secrets for making the salad’s featured vegetarian topping: her signature Lemon Dijon Marinated Baked Tofu! A protein-rich, plant-based creation that combines tart and tangy flavors, for a dish that is as healthy as it is delicious!
- Sliced, Grilled Chicken Breasts also share top billing on the salad, to make sure there is something for everyone to enjoy!
Dessert:
Mixed Berry Crumble with Oat-Einkorn Topping
- What is Einkorn, you might be asking? Caitlin will introduce the group to the oldest known wheat in the world! A hardy ancient grain with a nutty flavor, it is more nutritious than modern wheat, with higher protein and more antioxidants! Now you are in the know!

Caitlin's inspiration for healthy cooking was sparked at a young age, by her family's style of creating dinner from scratch each night. As a vegetarian for nearly three decades and an experienced chef and baker, Caitlin has shared her food and talents with patrons of Four Seasons Natural Foods for more than a decade. A chef at the long-standing and respected natural foods market and cafe, Caitlin has worked with and learned from some of Saratoga's most skilled chefs in the art of natural cooking. Now she is sharing that knowledge with you!
As a home chef, Caitlin loves help in the kitchen from her two daughters, creating space for them to experiment and learn about all that goes into creating dishes from farm to table. Caitlin also shares her expertise with aspiring home chefs. Through group instruction and workshops, Caitlin helps curious novice chefs hone their skills and create magical dishes on their own.
A registered yoga teacher and culinary artist, Caitlin has been sharing her expertise with Saratoga County for more than two decades. Caitlin lives in the Village of Ballston Spa with her two daughters, two rescue kittens, and spouse. She serves as the chairperson of the Park and Tree Board, bringing her knack for creating green spaces to community residents to enjoy.
From recipe creation to gardening mastery, Caitlin’s love of creating home grown, sustainable dishes enjoyed by all is contagious.
