As is often the case with whiskey, this collaborative project has been years in the making. While we frequently age beer in spirits barrels, we've never done anything quite like this!
Originally, Iron Fish aged whiskey in this barrel. They emptied that and aged maple syrup. They emptied that and aged more whiskey. They emptied that and provided the barrel to City Built. From November 4th, 2022 until November 7th, 2023, this barrel held City Built Symbiotic Method Stout. We then gave the barrel back to Iron Fish and they have been aging their rye whiskey in it ever since!
It's now time to give this barrel a well earned rest and enjoy the finished result of this Whiskey-Syrup-Whiskey-Beer-Aged Rye Whiskey.

Step 3: Iron Fish ages whiskey again in the barrel
Step 4: CB ages Symbiotic Method Imperial Stout in the barrel
Step 5: Iron Fish ages rye whiskey in THAT barrel
Step 6: We all drink this Maple Cask-Aged Rye Whiskey finished in Stout Barrels!
