In Prevent and Reverse Heart Disease, Dr. Caldwell Esselstyn, a former surgeon and researcher at the Cleveland Clinic, presents compelling evidence that coronary artery disease—the leading cause of death in the Western world—is almost entirely preventable and even reversible through nutrition.
The book’s central message is simple but powerful:
A whole-food, plant-based, oil-free diet can stop the progression of heart disease and, in many cases, reverse it.
Dr. Esselstyn supports this claim with both scientific research and decades of clinical results. He details his 20-year study of patients with severe coronary artery disease who adopted this dietary approach. Many participants not only halted their disease progression but also showed measurable regression of arterial blockages—without drugs or surgery.

Cardiovascular disease (CVD) is responsible for roughly one in four deaths in the USA. Modifiable lifestyle risk factors are associated with most heart attacks including many dietary risk factors including red and processed meat, saturated fat, refined carbohydrates, excess sodium and inadequate fiber.
Key benefits of plant-based dietary treatment for cardiovascular disease (CVD) include the control of hypertension, insulin, inflammation and oxidative stress.
Plant-based diets lower the risk factors of triglycerides, overweight, LDL and other biomarkers of CVD.
A strict low-fat (around 10%) whole food, plant-based diet has been shown to achieve serum cholesterol level of < or equal to 150 mg/dL or less which would help to avoid cardiovascular events.
Populations eating largely plant-based diets have the lowest rates of CVD.
Each class will focus on a body system, give some demos and skill build strategies to take with you to your own kitchen. A full shared meal is included in each session!
