Boxing Day to New Year’s Eve is a social time for many of us, entertaining becomes a
passionate pursuit. After the food bomb that is the big day, the thought of spending
hours in the kitchen and big meals is just about the last thing anyone wants to do.
Light fresh, quick and easy food to graze over is more the order of the day, leaving time
to indulge in socialising, but a bit lower key.

Fast and vibrant finger food is the perfect partner to a few drinks with friends and these
spring rolls are perfect. Using traditional rice papers and cooked leftovers with a few
fresh veggies and store cupboard staples means no cooking. Paired with a simple
dipping sauce these are light snacks that can be made ahead of time. This recipe also
brings an opportunity to practice some knife skills if you were lucky enough to find one
wrapped up under the tree.
Long winter walks are often the answer to the festive period. Warm up with a decadent
turkey melt. Make a light focaccia style dough, shape into calzone inspired buns filled
with leftover turkey, the trimmings and cheeseboard favourites. Instantly satisfying and
