Chocolate Making from the Bean

Join professional chocolatier Pam Cripps as she takes us on a fascinating journey of hands-on learning! We will be making our own chocolate directly from the cacao bean. Pam will walk us through the steps from harvest, fermentation, drying and roasting to our own hands-on winnowing, grinding, coaching & tempering. We'll learn the unique flavor properties of beans from different origins. As well, we will hand-paint chocolate shells to decorate our own personalized chocolates to bring home and enjoy! The class includes 3-hours of instruction and your own hand-made chocolates to bring home.
