Four Winds Farm’s monthly dining series will continue this month with an evening featuring Karben4 Brewing, a Madison brewery known for its bold brews and innovative flavors. Their work reflects a balance of creativity and technical skill, including their widely popular Fantasy Factory beer.Joe Walts, R&D Brewer at Karben4, will lead the dinner and share insight into each of the selections, as well as the brewery’s process and philosophy. Recently named Chef in Residence of Four Winds Farm, Jon Rosnow will return to cook for this dinner. His menus feature locally grown or foraged produce and proteins, which he handpicks and preserves himself. Each beer will be thoughtfully paired with a dish to highlight its unique flavors and characteristics.
Full menu and beer list will be announced soon. Joe is creating a special beer for this dinner featuring Four Winds Farm-grown Kernza, a unique perennial grain.
