Schedule

UTC-05:00Location
550 Highway F, Defiance, MO, United States, Missouri 63341 | Defiance, MO
Together, we will explore familiar spring greens - henbit, dead nettle, and chickweed - not as nuisances, but as generous plants offering nourishment and vitality. You will learn how to identify these common species, understand their basic characteristics, and experience the subtle flavors and qualities each brings to the table.
Our focus will be on transforming these greens into a vibrant wild pesto — a simple, adaptable recipe that awakens creativity and invites you into relationship with the land where you live. Through awareness, respectful harvesting practices, and mindful preparation, we will explore how food can become a bridge between us and the living world.
This workshop is about cultivating curiosity and seeing the overlooked. It is about remembering that nourishment is often growing right outside our door.
You will leave with a foundational understanding of several common spring greens, confidence in incorporating wild plants into everyday meals, a flexible wild pesto recipe you can recreate throughout the season, and a renewed sense of connection with your local ecosystem. Each participant will also get to take home a small jar of pesto.
Come ready to taste, to learn, and to see your environment with fresh eyes!
