Why It Works: The delicate tropical fruit notes of passion fruit and lychee pairs well with the creamy cheese with hints of citrus and blossom cents complementing the earthy beets and walnut crumble.

Dish: Braised Beef Short Rib with Rosemary Jus & Root Vegetables
Wine Pairing: Ayama Carignan
Why It Works: Carignan floral aromas with notes of infused violet, dark cherry and blueberries pairs well with the beef short rib offering moderate tannins and balanced acidity. Contrasting fruit flavours pairs well with the root and herb savoury elements enhancing the overall harmony

The charming family owned farm has a history dating back to 1685 when it was first settled by French Huguenot refugee Martin Pouisson.
