All Game Dinner of the Rocky Mountains

Long ago when I had restaurants we always hosted a wild game dinner. To say the least I have worked with every kind of game I could purchase in order to not duplicate menus. This dinner will be using some of the more common game found right here in the north American Rockies. Using some local ingredients like sage, juniper, and huckleberry we will creat a fantastic multi-course game dinner to include steelhead trout, whole semi-boneless quail, jackrabbit, and tender, beautiful, Elk medallions. Final flavors and preparations will be developed as we practice leading up to this meal. Don't miss this once a year dinner.
