2026 UF Summer Meat Judging Camp
About this Event
This camp is designed for youth meat judging teams and students aged 11 and older. There is no knowledge requirement for attendance, and is open to all students, whether new to meat evaluation or seeking to enhance their current skills.
Anticipated Schedule
Wednesday, June 8th
· 10 am – 1 pm: Introduction and Retail ID
· 1 pm – 2 pm: Lunch Break/ Interactive event
· 3 pm – 5:30 pm: Pork Judging/ Retail Classes
· 5:30 pm: Adjourn
Thursday, June 9th
· 8 am - 12 pm: Beef Grading
· 12 - 12:30 pm: Lunch Break
· 12:30 - 2:30 pm: Mock Contest
· 3:30: Awards
· 4:00: Adjourn
During the learning portion, we will spend time covering the fundamentals of:
· Retail ID
· Pork carcass and cuts class evaluation
· Retail cuts class evaluation
· Beef grading
· Beef carcass and cuts class evaluation
· Questions/Reasons introduction
· Ways to construct a notecard
Mock contest in the afternoon will consist of:
· Beef Quality and Yield Grading
· Retail and Carcass Classes (Beef & Pork)
· Retail ID
· Questions – On select classes
· Awards Ceremony – Brief recognition of top individuals
Participants are expected to wear closed-toed shoes, long pants, and bring a jacket to take part in activities in the cooler. Students should also bring a clipboard, pens, pencils, a hard hat, and a frock. If a student does not already have a hard hat and frock, one will be provided.
Lunch and drinks/snacks during both days will be provided.
