About this Event

Celebrate the season with purpose and flavor in this immersive, hands-on culinary workshop that brings the “Food as Medicine” philosophy to life. Set in the 1440 Teaching Kitchen, this experience highlights anti-inflammatory, antioxidant-rich, and gut-supportive ingredients designed to help you Live Well through the holidays.

Join Chef Ryan Fillhardt, Culinary Arts Education Faculty, along with members of the 1440 Culinary Team as they guide guests through interactive cooking demonstrations and hands-on preparation of festive appetizers and side dishes. The menu features nutrient-dense creations, with each dish showcasing seasonal produce and balanced flavor profiles as you learn more about their medicinal benefits.

Throughout the class, Chef Ryan will explore the concept of “Food as Medicine” through the lens of holiday wellness, and participants will learn to blend culinary technique with nutritional insight. You will prepare, observe, and taste dishes that nourish both body and mind.

The educational workshop concludes with a shared meal in community at Teaching Kitchen to enjoy the evening’s creations, accompanied by thoughtful conversation around our Food as Medicine nutrition philosophy.

By the end of this class, participants will be able to:

  1. Identify and apply “Food as Medicine” principles to holiday cooking, focusing on anti-inflammatory, antioxidant-rich, and gut-supportive ingredients.
  2. Prepare seasonal appetizers and sides using whole foods and nutrient-dense ingredients such as mushrooms, squash, cruciferous vegetables, whole grains, and healthy fats.
  3. Demonstrate culinary techniques including confit preparation, vegetable roasting, emulsified dressings, and grain salad composition.
  4. Understand the nutritional benefits of ingredients like walnuts, cranberries, EVOO, goat cheese, and wild mushrooms in supporting immune health, digestion, and cardiovascular wellness.
  5. Adapt traditional holiday dishes to be more health-supportive without sacrificing flavor.

  • Wild Mushroom & Brie Tart (Duck Option) with Roasted Red Beets & Honey Puree, Fresh Garden Herbs
  • Duck Leg Confit Crostini (Turkey Leg Option) with Honey Citrus Mustard Sauce, Caramelized Onion Puree
  • Butternut Squash Eggplant Rollatini with Spinach, Golden Raisins, Pinenuts, Basil, Yellow Curry
  • Prosciutto Wrapped Grilled Asparagus with Goat Cheese, Dates, Roasted Red Bell Pepper Coulis, Extra Virgin Olive Oil (EVOO)

  • Super Green Grain Salad with Toasted Walnut Dressing with Quinoa, Broccoli, Kale, Brussel Sprouts, Cranberries
  • Wild Mushrooms Stuffing with Homemade Pork Sausage (Chorizo Option) with Dried Cranberries, Garden Fresh Sage, Carrots, Celery, Onions
  • Roasted Brussel Sprouts with Aged Balsamic Syrup, EVOO, Cranberries, Pecans, Caramelized Onions
  • Aloo Bhorta (Mashed Potato) with EVOO, Red Onions, Cilantro, Mustard, Lime, Green Chilis

1440 is a philanthropic campus, and each booking contributes to serving our community by providing scholarships and volunteer services in support of creating hope for living well.

Discovery Dinner Schedule:

  • 3:30-4:00 p.m.: Arrival & Registration
  • 4:00-7:30 p.m.: Holiday Appetizers and Sides class with 1440 Culinary Arts Education faculty Chef Ryan Fillhardt, includes progressive dinner during class.
  • 7:30-8:00 p.m.: Event Conclusion & Departures


Price: $120 per person. Includes hands-on class and progressive dinner at the Teaching Kitchen.

Event Notes:

  • If you have a dietary restriction or allergy, please email us at [email protected] so we may do our best to accommodate you.
  • The start time of the class is 4:00 p.m., and guests may check into campus up to 30 minutes before the class start to enjoy our Lodge Retail Shop, Bridge of Intentions and Common Grounds Patio. Please note that other locations of campus, including the trails and jacuzzi tub, are not available for Community Education Class guests due to other campus programming.
  • This is an indoor event, held in in the 1440 Teaching Kitchen.
  • 1440 will provide everything required for this class.
  • Reusable water bottles are welcome -- filtered water stations are available throughout campus.
  • This is an 18-and-over event.


Cancellation Policy: Participants may request a refund up to 7 days before the event. After this period, all sales are final. All proceeds from Community Learning Events support our 1440 philanthropic and volunteer efforts.
