You love chocolate. It’s your favorite treat, your favorite gift, and you’ve been known on occasion to dream about it. But how well do you actually know chocolate? The key ingredient, cacao, is native to the Americas. But most all of the chocolate you eat is made from cacao from Africa, and is a single variety: Forastero. And you’re not wrong for loving it — it tastes great! But, by largely only consuming one variety of cacao from one region, we’re putting the biodiversity of the planet at risk, and in so doing, putting our food sources — and medicinal sources — at risk.
