Fish Course:

Pan-roasted cod, brown butter shrimp & sea herbs

Main Course:

Roasted guinea fowl, chestnut, wild mushrooms, pancetta

Dessert:

Dark chocolate delice, cherry gel & shortbread crumb

Darren began his career in Scotland, working across exclusive venues, country clubs, and 5-star wedding destinations before moving to London — where he joined the world-renowned Savoy Hotel.

At The Savoy, one of the most iconic luxury hotels in the world, Darren led banqueting operations and worked alongside world-class chefs to deliver unforgettable dining experiences for royalty, world leaders, and A-list celebrities. It was there he developed not only technical precision, but a deep respect for service, detail, and calm under pressure — the foundations of five-star hospitality.
