Matt Reilly and Lee Salas are both internationally acclaimed cheesemongers at The Cellar & Pantry and Jamón Jamón both located in The Delray Beach Market. In addition to curating our ever-growing wine list and artisan cheese inventory, they lead weekly wine tasting events, pairing classes, monthly trainings like mozzarella making, focaccia and NEW "Pasta Demo & Dinner Event" (all tickets on sale now! ).With 20 years of experience in cheese retail, Lee has lived and worked all over the world: NYC, Peru, Colombia, Costa Rica, Panama, Chile and Mexico. In 2000, he began as an apprentice under Max McCalman, one of America's foremost cheese experts.
His mission is to promote and develop the market for European cheese in LATAM. Focusing on high quality cheeses and becoming an advocate for their consumption. Having extensive experience importing French, Italian, Spanish, British cheeses in Perú, Chile, Colombia, Costa Rica, Panama and soon Mexico. Setting up proper retail spaces with trained teams as a platform to help us grow the culture of enjoying cheese on an everyday basis.Lee opened Eataly Flatiron in NYC as Manager of Salumi e Formaggi NY in 2010.
Concept Developer of Cheese Corner in Lima, Peru from 2016 to 2017, Lee designed the space, curation of cheeses, importing, hiring and training staff. Over 150 Farmstead cheeses from Europe, which boasts as the biggest selection in Latam!
Lee also curated the cheese and charcuterie program for French Paradox, Epicerie Gourmet located in San José, Costa Rica in 2018. (Mons Fromager, Guffanti Formaggi, and Joselito). Founding partner of Chevre Panamá (2019), he helped create the hybrid concept retail/restaurant based on the best European cheeses (IG @chevrepanama) Cheese shop/ GourmetMarket/ full service restaurant / Neapolitan Pizzeria. Qaray, Gastronomic Congress part of Mistura, 2015, Lima Perú. He spoke about the cheesemonger craft with fellow cheesemonger Frederic Van Tricht (Bélgium). Lee served as an International Judge at the Cheese competition of the Expo Nacional de Cabra, Guanajuato, MX for 2016 and 2017.

Mexican wine and cheese tasting guided by Lee Salas Rosell and Andrés AmorCatando México 2017, Teatro Juárez Mexican Farmstead cheese tasting and pairing with Mexican wine. Tierra de Quesos, Valladolid España, 2017 - Presentation about modern retail (Specialty food) in USA and LATAM. Business opportunities, the know-how of approaching this new market. He also had the honor of being a judge at the World Cheese Awards in Bergen (2018) and Bérgamo (2019).
Guest Judge at WCA in Norway 2018 and Italy 2019. Cata sensorial de quesos, Cordon Bleu, Lima Perú 2018. Led and implemented the cheese 101 tasting course for the Sommelier program atLe Cordon Bleu Lima. Concours Mondial du Meilleur Fromager - France (Sept 2021). Cheese 101, Introduction to "The World of Cheese" in Spanish (8 hr course).Lee was invited to compete this September 2023 at the Best International Cheesemonger Competition!
Over 15 sessions in Perú, Mexico, Colombia and also online in 2020 with over 300 participants from Perú, Mexico, Colombia, El Salvador, Costa Rica.For more details or any questions:
