This year’s Wine Expo seminars will keep you entertained with a variety of unique food and wine pairing experiences.
Each tasting will be paired with small plates crafted by the Coliseum’s new Executive Chef, Alex Haun - winner of the Canadian Culinary Federation’s recent national Chef’s competition. We’re thrilled to be working with him for this year’s event.
The 90-minute seminars will be hosted by Sommelier Bill Vance along with special guests, promising seminars with exceptional wines, delicious food, and engaging conversation.

Sunday, November 2: 2025 Prestige Tasting

Info: The annual ‘Prestige Tasting’ is one of the highlights of every Wine Expo. And why not… attendees at this amazing wine tasting are treated to some of the most interesting wines in the Wine Expo catalogue… many of which have earned significant awards, scores, and distinctions.
Need another reason to attend? This extraordinary wine tasting takes place on the floor below El Rio, the new restaurant and bar launched by our friends at BRIX. The tasting includes an après-tasting plate of delicious food prepared by BRIX’s incredibly talented team of chefs. If you’ve never been to El Rio, you owe it to yourself to come see what all the excitement is about. NOTE: Second floor of Dolma, next door to the BRIX Experience.
Tickets are very limited for this tasting of Champagne and nine different wines, so don’t delay.

Monday, November 3: Full Bodied Reds from around the Globe

Info: Full-bodied… light-bodied… what do these terms really mean? This seminar is featuring only full-bodied red wine, and we can guarantee that you will understand the term by the end of this six-wine tasting.
Full-bodied wines have been increasing in popularity for over 10 years, and when you taste these intensely flavoured powerhouse wines, you might understand why. This is a red wine tasting of concentration and power… and not for the faint of heart.
This six-wine tasting will include three small plates of food prepared by the Coliseum’s new Executive Chef, Alex Haun. Chef Alex is the winner of the Canadian Culinary Federation’s recent national Chef’s competition, and we are thrilled to be working with him. Wow, how delicious!

Tuesday, November 4: Exploring the Value of Spanish Wine

Info: Are you the type of wine drinker who appreciates bottles that offer enhanced value? I know we are! Few European countries can offer more consistently great value than Spain.
Spanish wines are definitely ‘old-world,’ meaning that they remain true to their historic styles… earthy, exotic, and very tasty.
This six-wine tasting will include three small plates of food prepared by the Coliseum’s new Executive Chef, Alex Haun. Chef Alex is the winner of the Canadian Culinary Federation’s recent national Chef’s competition, and we are thrilled to be working with him. He is a great addition to the Coliseum team!

Wednesday, November 5: Wandering the French Wine Trail

Info: In the entire wine-making world, few countries enjoy as many world-class wine-growing regions as France. And each region has its own history, wine-making traditions, and, of course, different grapes and flavour profiles.
During this delicious wine-tasting journey, we will sample both white and red wines from areas including Burgundy, Loire Valley, Rhone Valley, Bordeaux, and more (indeed… we will be tasting two Bordeaux wines from the left and right banks of the Gironde River!!!).

Wednesday, November 5: Chianti Classico - The World’s most food-friendly Red?

Info: While many red wines will claim to be the most ‘food-friendly,’ few would argue that the extraordinary red wines from Chianti Classico represent some of the wine world’s most food-friendly based on their distinct character and flavour profile!
While Pinot Noir has some claim to this title, the fact is that the upscale wines from the Chianti Classico region of Tuscany have been a favourite at tables around the world for several centuries. But why? This exciting seminar will illuminate the uniqueness of this region, and we’re sure you’ll experience these unforgettable wines in a new and delicious way.

Thursday, November 6: Pio Cesare – the Legend from Piedmonte
Host: Mr. Augusto Boffa
Info: Calling all Italian wine lovers…this is a tasting for you. This exceptional experience will feature the wines from renowned Piedmonte producer Pio Cesare.
The winery was founded in 1881 and remains privately operated, maintaining traditional winemaking methods that emphasize minimal intervention and a focus on highlighting the unique characteristics of the region's diverse terroir. Pio Cesare produces wines noted for their complexity, ageability, and elegance.
This 5-wine tasting (including a $100 per bottle Barolo) will include 3 small plates of food prepared by the Coliseums new Executive Chef Alex Haun. Chef Alex is the winner of the ‘Canadian Culinary Federations’ recent national Chef’s competition!
This 90-minute seminar will be hosted by Mr. Augusto Boffa, part of the Pio Cesare family and promises to be a great wine tasting.

Thursday, November 6: Italy's Barolo - The King of Italian Red Wine!

Info: Barolo’s reputation as the “king of wines and wine of kings” dates back to the 19th century, when aristocrats and Italian royalty embraced it as a wine worthy of regal status.
Known for superb structure, balance, and longevity, Barolo’s “royal” reputation is further emphasized by its pairing versatility and depth, often making it the centerpiece of Italian wine culture.
Barolo is produced exclusively from Nebbiolo grapes grown in the Piedmonte region's unique terroir, providing extraordinary complexity and aging potential. Its flavours, which include cherry, rose, truffle, licorice, and earth, evolve beautifully over decades, contributing to the wine’s mystique and allure for connoisseurs.
