Long ago in Adjara, a fisherman named Giorgi fell in love with Mariam, a baker’s daughter. Giorgi spent his days at sea, dreaming of ways to express his love. One stormy night, his boat was wrecked, and Mariam rescued him, nursing him back to health in her father’s bakery. As they grew close, Mariam created a special bread to honor Giorgi’s love for the sea – shaped like his boat, filled with creamy cheese to mimic the waves, and an egg yolk as the sun.
Their love story inspired the creation of Adjarian khachapuri, a dish that remains a symbol of love and the sea to this day.
