About this Event

Welsh Rabbit Cheese Pairing

Join Old Town neighbors Nuance Chocolate and The Welsh Rabbit for an intimate, guided tasting evening exploring the unexpected synergies between two ancient, fermented culinary crafts: bean-to-bar chocolate and artisan cheese.

Led directly by a specialist from each team, this five-course sensory flight explores how origin acidity, roasting physics, and cocoa butter interact with aged pasture crystals, bloomy rinds, and rich alpine milk curds.

The Guided 5-Course Pairing Flight

Course 1: Bright & Bloomy

  • The Cheese: Brebirousse d'Argental (French sheep’s milk brie; velvety and rich with delicate mushroom undertones)
  • The Chocolate: Mexico Single-Origin (Rare blanco cacao naturally high in cocoa butter; lighter in hue with notes of apricot jam on warm baguette)

Course 2: Savory Alpine & Walnut Fudge

  • The Cheese: Classic Swiss Gruyère (Dense, nutty, unpasteurized alpine cow’s milk cheese)
  • The Chocolate: Vanuatu Single-Origin (Low-acidity South Pacific cacao; deeply dark in color with a dense, fudge-like melt and notes of baked brownie and toasted walnut)

Course 3: Ruby Port & Roasted Extraction

  • The Cheese: Port Wine Derby (Traditional English cheddar marbled with fruity ruby port)
  • The Chocolate: Ozo Coffee Bar (High-acidity Madagascar cacao layered with grapefruit and raspberry, infused with Ozo's naturally processed Ethiopian espresso featuring prominent blueberry notes)

Course 4: Crystalline Pasture & Coconut

  • The Cheese: Prairie Breeze Cheddar (Award-winning Iowa cheddar packed with savory tyrosine crunch crystals)
  • The Chocolate: Ivory Coast 70% (Rainforest Alliance certified; classic bold structure displaying elegant notes of coconut and black tea)

Course 5: Sweet Smoke & Confectionery Cream

  • The Cheese: Stomp Toren Grand Cru (Deeply aged smoked Gouda with buttery, savory caramel notes)
  • The Chocolate: Oat Milk Chocolate (Plant-based milk chocolate crafted with certified gluten-free oats for a smooth, creamy, caramel-forward melt)
