While being martyred on a grid-iron, St Laurence famously said "turn me over, I'm cooked on this side!" The patron saint of cooks, barbeques, firefighters, archivists, and comedians, is known for these last words. But St Laurence is also perpetual deacon, protector of the poor: and this is often less well advertised. Before being sentenced to death, he was asked to procure the riches of the church. It is said that Laurence asked for three days, in which he gathered all the poor of the area. He presented them to the prefect of Rome, Valerian, saying "Here are the treasures of the church."
