About the Kitchen of Longevity
The Functional Kitchen of Longevity isn't just a method George and Eleni invented - it's one they inherited. Built from the conditions passed down by their ancestors, and refined alongside some of the longest-lived people on Ikaria, its methods have since been tested against modern nutritional science: inherited wisdom, now backed by research into inflammation, gut health and the prevention of chronic disease.
It is a new concept, derived from ancient wisdom - one that advances past how food is prepared today. Most modern cooking has never asked how the food itself is being treated as it cooks. The kitchen of longevity does.
The Objective
Tasty food. Nutrient-rich food. Almost no kitchen achieves both - high heat makes food delicious but destroys what's in it; gentle preparation preserves nutrients but can leave food bland. The kitchen of longevity exists to solve exactly this.
Their knowledge doesn't stop at the kitchen door. How and when to move, how to sleep, the rhythms of natural fasting, and the daily rituals that keep a body in genuine, disease-free condition — this is what makes it a functional kitchen: it treats food as one part of a whole system of bodily processes working together for health.
The Three Secrets of the Ikarian Longevity Kitchen

What to Expect
⏱ 30 minutes — The principles behind the Ikarian longevity kitchen, explained
🍳 2.5 hours — Hands-on cooking practice with George and Eleni — enough time to truly take the method home
🍷 1 hour — A shared meal, paired with natural wine from the Karimalis family vineyard
Each session is limited to approximately 15 participants, to keep the teaching genuinely hands-on.

About George & Eleni Karimalis
George and Eleni Karimalis run the Karimalis Winery and Farmhouse Restaurant in Pigi, Ikaria - one of the world's five Blue Zones, where people live measurably longer, healthier lives. Ikarians for five centuries, they didn't learn this from a book - they learnt it from their ancestors, and have lived it for over fifty years on the same land their family has farmed for five centuries.
They teach 20–30 workshops a year for medical symposiums, professional chefs and wellness communities across Europe and North America. As featured on Netflix's Live to 100: Secrets of the Blue Zones and Channel 4's documentary with Jon Snow.
