This month's supper club will feature a seafood paella experience by Chef Ken Lefebour.

Seafood for the evening is provided by fish monger Luis Bauis of Wholesale Select Premium Seafood, featuring premium-quality seafood carefully sourced for the evening’s paella experience.

Info: Ken LeFebour is a Hamilton culinary icon and the creative force behind Nellie James Gourmet Food to Go. With over four decades of experience, Ken has moved beyond the constraints of rigid recipes to champion what he calls "modern nonna" cooking—a style rooted in instinct, local seasonality, and the "truth of flavor."Known for his "punk-rock" culinary philosophy, Ken doesn't cook by a manual; he cooks by sound, movement, and a deep, tactile connection to his ingredients. His approach is conceptual and free-form, a philosophy he explores in his upcoming memoir-cookbook, I’m Just Gonna F**king Cook. His mission is to strip away the pretense of the professional kitchen and return to a soulful, intuitive way of eating that celebrates local farmers and the community at the table. At this month's supper club, Ken brings this improvisational energy to his Seafood Paella, building the dish in real-time by trusting his palate and the sensory cues of the open flame.

Info: Renn Scott is a visionary strategic designer, prolific inventor, and the creator of MakerWear, a line of urban workwear engineered for the modern creator. With a background rooted in human-centered innovation and over 100 patents to her name, Renn approaches clothing not just as fashion, but as a "wearable system." Her work focuses on the intersection of movement and utility, ensuring every garment responds to the specific routines of the person wearing it.Following the acclaimed debut of MakerWear at Hamilton Fashion Week, Renn is here tonight to share an exclusive work-in-progress look at her newest evolution: a dedicated line of aprons and chef coats created specifically for the Samplelicious community.Moving from the workshop to the kitchen, Renn is reimagining culinary apparel through the lens of refined utility. Every seam, pocket, and strap is being prototyped to handle the high-intensity demands of a professional kitchen while maintaining a sharp, modern silhouette.

Host: Karen Logan

Info: Karen Logan is a Hamilton-based nature and science illustrator whose work blends detailed botanical and wildlife illustration with environmental education and conservation awareness. Originally trained as a mechanical draftsperson and technical illustrator, Karen works across media including watercolour, acrylic, encaustic, and Chinese Brush Painting.

At the Supper Club, Karen will showcase works connected to *Our Fragile Environment*, a public educational resource and illustrated series focused on identifying species found throughout Hamilton, Ontario. The project celebrates the region’s biodiversity through detailed illustrations, research, and accessible educational materials.

Guests will be able to explore paintings featuring native plants, birds, mammals, butterflies, dragonflies, and other local species while learning more about the ecosystems and biodiversity that make Hamilton unique.

Host: Kaeley Cole; BARC

Info: Founded in 1991, the Bay Area Restoration Council (BARC) is a charitable organization dedicated to restoring and protecting Hamilton Harbour and its watershed through education, stewardship, and community engagement.

At the Supper Club, Kaeley Cole from BARC will showcase the Biinaagami Giant Floor Map; a large-scale interactive map of the Great Lakes basin designed to explore the interconnected waterways, ecosystems, communities, and Indigenous lands that shape the region.

Used as part of BARC’s educational programming reaching thousands of students annually, the map offers guests a visual and immersive way to better understand Hamilton’s connection to the broader Great Lakes system and the importance of protecting our shared waters and local environments.
