Join us April 17 as we host Chris Robinson of Eagle Eye Imports, and experience food and wine of the Balkan region of Southeast Europe. Many of the wines we will be sampling have been crafted using an ancient approach to winemaking, and have been naturally fermented with wild yeast.To complement the wines, Chef Billy Wood will be preparing a 6-course menu, inspired by the region:
First Course: Sarma
Pickled cabbage roll stuffed with braised lamb neck, housemade bacon, garlic, parsley, rice, and paprika, topped with a smoked tomato sauce
Wine Pairing: Kobal "Bajta" Pet Nat Blaufrankisch Rose Sparkling; Slovenia 2023
Second Course: Bosnian Octopus Salad
Lemon-poached octopus, potato, garlic, herbs, and served with a cucumber-yogurt sauce
Wine Pairing: Brkic Zilavka White Wine; Mostar, Bosnia & Herzegovina 2021
Third Course: Buzara-Style Mussels
Garlic, white wine, herbs, breadcrumb, tomato, butter, lemon, and served with crusty bread
Wine Pairing: Enjingi Welschriesling "Grasevina" Slavonia; Kutjevo, Croatia 2022
Fourth Course: Cevapi
Housemade beef and lamb sausage, grilled peppers and zucchini, flat bread, and served with ajvar (a red pepper, eggplant, and garlic sauce)
Wine Pairing: Sanctum Bubamara Pinot Noir/Syrah; Stajerkska, Slovenia 2020
Fifth Course: Potato Musaka
Potato, grass-fed ground beef, onion, tomato, parmesan, and breadcrumb
Wine Pairing: Ivica Pilizota Plavina; Dalmatia, Croatia 2023
Sixth Course: Sampita
Sponge cake with lemon-vanilla meringue
