When you use pre-industrial processes to convert agave into alcohol, it’s not only difficult to obtain the exact same result from one batch to the next — it’s not even the objective. We’ll explore that idea on Friday, December 6, when Lou Bank from SACRED walks us through three expressions of Tobala made by Victor Ramos in Miahutalan, Oaxaca. The tasting will consist of three Tobala expressions made at three different points in time, and then stored two different ways, so … six small pours. Plus, there will be handmade chocolate from Mexican cacao, because Lou loves the biodiversity of chocolate.
