Starters:
Confit turkey salad with radicchio, spring onions, candied pecans, wild rice, and pickled cranberries. (veggie option with whipped stilton, vegan with marinaded seitan).
Chalkstream trout gravadlax, sour cream, pickled carrots, on blinis. (vegan and veggie option with mushroom paté).
Beetroot & cauliflower pakora, lemon kefir, walnut dukka, and honey. (vg)
Mains:
Talton Lodge cured roast pork.
Venison 2 ways; ragu and pink medallions.
Squash and tofu terrine with redcurrant stuffing and orange glaze.
All served with roast potatoes, roasted carrot, pear and parsnips with watercress pesto, sprouts with cavolo nero and chestnut crumble, red cabbage, and gravy.
Puddings:
Chocolate, chestnut, and almond cake, prune and Armagnac ice cream (can be vegan).
Orange and Campari jelly, pistacchio biscuits, chocolate sauce.
Cranberry and apple tart tatin with amaretto ice cream (can be vegan).
