Guests of the Sunset Dinner Experience are treated to a multi-course meal with beverage pairings all while enjoying conversation with friends new and old in a purposeful conversation dining experience. Smedley Events utilizes a purposeful conversation model to create opportunities for dialogue that connect guests and allow them to discover their commonalities. After dinner and conversation, the evening is capped off with local entertainment as guests enjoy a picturesque view of a Colorado sunset cascading over Mount Evans.

In the second season of the Sunset Dinner Experience, Smedley Events will host a public event on Saturday, July 10th featuring the topic of Sustainability (n: the ability to be maintained at a certain rate or level).

What does sustainability mean to you? At this dinner, guests will be invited to share stories about their experience with sustainability. What are some of your favorite memories outdoors? What has helped sustain your physical or mental health over the last year? We invite guests to share as they feel comfortable and listen with the intention to learn something new.

This Sunset Dinner will feature Chef Terence Rogers and Holly Adinoff of Sullivan Scrap Kitchen. Terence has over 9 years of experience working in a variety of kitchens across the country. Shortly after moving to Denver, Terence saw an opportunity to use the "scraps" from his fine-dining catering dinners to create tasty sandwiches. He tested his idea for a food waste cafe in 2019, when he started Lil Scrap Kitchen. After a couple of successful months, Terence found the perfect restaurant location for Sullivan Scrap Kitchen, where his passion for sustainable food practices and delicious meals could grow and flourish.
