Join the Haskell Greenhouse for a sunchoke (Helianthus tuberosus) harvest at the Cultural Center's gardens! Sunchokes are one of Kansas' native potatoes. Their tuber roots are delicious and high in fiber and probiotics, which help aid with indigestion. Tribes have eaten them as food for thousands of years.Many sunchokes at the Cultural Center are not doing well in the dry garden soils. We will harvest some to eat and move around on the land. A dry prairie garden will go in their place. The tubers we will eat will be used in a soup-making workshop.
Please come prepared for cold weather and with a source of water. All necessary tools will be provided.
