When to pick and how to store. Knowing when to harvest your fruits and vegetables can make all the difference in flavor, texture, and shelf life. In this session, we’ll walk through key indicators for determining peak ripeness and how timing your harvest can improve both taste and storage. We’ll also explore proper post-harvest handling techniques, including washing, curing, refrigeration, and root cellaring strategies to extend the life of your produce. We’ll end with a short hands-on activity where you’ll learn how to make your own ketchup from scratch using simple ingredients from the garden. Attendees will get to season and bottle their own! This workshop is great for gardeners, home cooks, and anyone interested in making the most of the harvest season.
