MENU:
- Aguachile - lime marinated Mahi Mahi with cucumber-jalapeño salsa, pickled red onions, fresh cucumber, cilantro and crisp tostadas
- Smoked Beef Tenderloin with ancho fideo seco, caramelized onions and jalapeño, avocado salsa, and queso freco
- Grilled Herb Marinated Lamb Chop with mole blanco, mole pipian verde, toasted pepitas, sesame seeds, and cilantro
- Camarones Ajillo with sautéed Gulf Shrimp in a garlic-rosemary butter over Mexican esquite style corn
- Pistachio Tres Leches
From Chef Zepeda:
I'm so excited to get back in the kitchen and do what I love!!! This menu is inspired from growing up Texan and learning Mexican. I'm a South Texas country boy that has always loved to cook! I'm definitely more Tex than Mex, but my soul is small town Mexican comfort food. I remember times of only having a wood fire grill to cook on and making it happen. For this dinner, my wood fire roots meet my passion for Texan and Mexican soulful flavors that I've learned throughout the years in kitchens and ranches.
