Grilled Prickly Pear & Confit Duck Salad, charred Mandarin vinaigrette, feta cheese, almonds, mixed greens

Second Course:

Lamb & Lentil Picadillo-Stuffed Conchita (pasta), aji requeson, tri-colored marbled potatoes

Third Course (palate cleanser):

Mamey's Ginger Sorbet with spiced pickled black cherries, chapuline chili dust

Fourth Course:

Braised Short Rib with blistered green bean almandine, sweet potato mofongo
