This month, explore the bold and distinctive flavor of kala namak, a mineral-rich volcanic salt commonly used in South Asian cuisine. Known for its pungent, eggy aroma, kala namak adds umami depth to vegan dishes, spice blends, and snacks. It’s perfect for experimenting with plant-based cooking or adding a surprising twist to familiar recipes. May’s kit includes two flavorful recipes and reading picks focused on food, identity, and ethical choices.
