Once upon a time, in a teeny-tiny kitchen where buttery aromas floated like happy clouds, there lived a chubby “little” wannabe-chef named Paul Rydza. Hailing from the spice-loving town of Buffalo, NY (yes, the land of the legendary chicken wings), Paul grew up surrounded by the mouthwatering smells and zesty flavors of his grandma's basement kitchen. His culinary journey started right there amidst the tantalizing aromas and his over-sized tastebuds.


Paul's obsession with herbs and spices began during his stint at the hallowed halls of KFC. He spent his days trying to decipher the Colonel's "11 Secret Herbs & Spices" code like a culinary detective. Determined to crack the code (or at least get close), Paul saved up every penny to embark on a sensory-overload journey to Israel and the Middle East where he was seduced by the mesmerizing sights and enchanting scents of exotic spice markets that seemed to belong to another world entirely.


This was the moment when Paul's spice adventure truly ignited. He made it his mission to demystify these exotic flavors and bring them back home to America. Armed with an insatiable curiosity and tastebuds to rival a seasoned sommelier's nose, Paul spent 15 years tasting and categorizing hundreds of herbs and spices into 25 different flavor profiles. He became a true spice whisperer, crafting blends that turned bland dishes into culinary fireworks, but he really did whisper to them: it’s a proven fact (ahem) that herbs & spices like peace and quiet.
