In this class we will be learning how to use a Immersion Heat Circulator.....or a Sous Vide. Sounds fancy but it is simple.
In this class we will be cooking food in water. Water that is precisely controlled by a water heater. This heater also circulates the water allowing you to get a perfect temperature on whatever you are trying to cook.
We will be cooking, meats, vegetables, sauces.......all cooked in this water oven.
We will go over the actual machine and what you will need to successfully cook with the Sous Vide technique. From start to finish and we will get to eat what we are cooking.
High end restaurants have used this technique for years. We will cook them in the water and then sear the food.
Cast Iron, Torch, Oven all will be used to caramelize the foods.
Sous vide, which means “under vacuum” in French, refers to the process of vacuum-sealing food in a bag, then cooking it to a very precise temperature in a water bath. This technique produces results that are impossible to achieve through any other cooking method.
