The Art of Sourdough
In this course, you’ll learn how to create and maintain your own sourdough starter while gaining valuable insights into the microorganisms that shape the flavor and texture of sourdough bread.
Our experienced bread experts will share the secrets of cultivating a healthy and active starter.
Creative Crust Design
Discover the craftsmanship behind beautiful bread crusts.
From traditional scoring to artistic patterns, we’ll show you various techniques to personalize your loaves and give them a unique signature.
Essential Tips for Home Ovens
Learn how to achieve professional baking results using a regular home oven.
Our instructors will provide practical tips on temperature control, loaf positioning, and how to use steam to achieve a perfect crust.
Two Dough Recipes, One Delicious Experience
We’ll prepare two different doughs to explore the variety of sourdough baking.
First, a rustic potato-spelt bread enhanced with herbs and spices.
Second, a classic wheat loaf with a light and airy texture and mild flavor.
Delicious Pairings for Your Bread
While the doughs rise, we’ll prepare a seasonal soup, two flavorful spreads, and fresh butter to accompany your freshly baked breads.
For a sweet finish, enjoy a delightful dessert.
Course Structure
- Welcome drink to start and connect
- Introductory theory: sourdough, microorganisms, starter care & baking fundamentals
- Hands-on: two different sourdough recipes
- Preparation of soup, spreads, and dessert
- Tasting session of all baked goods and dishes
- Take home your own sourdough starter
Please note:
You’ll create your own starter during the class to take home and continue nurturing. Since a starter needs extended rest time in the fridge, we’ll use pre-prepared starters for baking the breads during the session.
Course Goals
Our goal is that by the end of the class, you not only have baked two delicious sourdough breads, but also gained the skills and knowledge to confidently recreate them at home.
We aim to inspire your love for baking and provide an enjoyable, hands-on learning experience.
