Someone who has baked sourdough at least a few times, knows stretch & folds, bulk fermentation, and shaping basics, BUT feels stuck with: gummy crumb, long bulks, inconsistent results, “sometimes it works, sometimes it doesn’t” loaves. We’ll go over: Strengthening your starter, bulk fermentation (let's get it down!), strengthening your gluten, shaping for structure, cold proofing & baking strategies, irregular timing decisions, specialty items and inclusions, and troubleshooting and question time
