This immersive 3-hour session guides students through the technical process of building, frosting, and decorating a professional-grade layer cake. Participants will master the fundamentals of building a structurally stable cake and learn how to create a beautiful finish using dried, pressed florals and a smooth buttercream finish.What You Will Learn
- Tool Discussion: Learn which tools will help you achieve a professional look and structurally sound cake vs. which ones are unnecessary.
- Sponge Preparation: Master the "scoring" technique with a serrated knife to level and trim sponge layers into perfect 1-inch discs.
- Structural Assembly: Learn to apply simple syrup for moisture and construct a buttercream "dam" to securely hold interior fillings.
- Frosting Mastery: Practice the "side-to-side" motion for smooth application and use an icing smoother to achieve professional "live edges" and gap-free sides.
- Floral Artistry: Explore the aesthetic placement of dried pressed flowers to create a simple yet gorgeous spring design.
Class Schedule
- Introduction (15 mins): Welcome, instructor introductions, snacks and beverages.
- Tool Specifics (15 minutes): Discussion of necessary tools and equipment for cake building.
- Trim Sponge (15 mins): Hands-on trimming of rounded tops and torting layers using the turntable method.
- Build Cake (30 mins): Layering sponge with simple syrup and filling, including the dam technique overview.
- Break (15 mins): Leg stretch and beverages refills.
- Cover Cake (30 mins): Demonstration and hands-on application of the final buttercream coat and smoothing.
- Decorate Cake (30 mins): Adding texture and applying dried florals using SMBC as an adhesive.
- Photo and Box (15 mins): Photo op and packaging cakes into boxes with care instructions.

- Refreshments: Access to a snack counter including house-made non-alcoholic drinks, charcuterie and fruit skewers, a dessert, and a Keurig coffee station.
- Tools & Equipment: Access to professional cake turntables, offset spatulas, icing smoothers, and serrated knives needed during the session.
- Take-Home Cake & Recipe: Every student leaves with their custom 6” 4-layer cake and a recipe for Swiss Meringue Buttercream.
Notes:
- Tickets are NON-REFUNDABLE! If you are unable to attend the class, you may transfer the ticket to another person. Tickets are not transferable to another class.
- Doors will open 10 minutes before listed class start time. Students wishing to grab seats together are encouraged to arrive when doors open, otherwise we cannot guarantee reserved seating regardless if tickets were purchased together or not.
