Roll up your sleeves for a hands-on culinary experience where you'll master the art of crafting silky, scratch-made pasta dough. After learning the secrets behind making fresh, warm ricotta cheese, you'll roll and hand-cut your own pappardelle noodles, before sitting back to enjoy your fresh pasta tossed in a rich, creamy, ricotta-based sauce.

What You Will Learn
- Fresh Ricotta: Witness a demonstration on how to make this fresh, mild, soft cheese, including ideal temperatures and ingredients
- The Perfect Dough: Learn the traditional ratios for pasta dough, the importance of flour selection, and the essential techniques of kneading and resting to achieve that signature silky texture
- Rolling & Cutting: Get hands-on experience using a pasta machine to roll your dough and learn how to cut your dough by hand into beautiful, fresh pappardelle
- Sauce Preparation & Cooking Discussion: Discuss and prepare the remaining ingredients necessary for making a creamy ricotta sauce and learn how to cook your noodles
- A Shared Feast: After the work is done, sit back and enjoy the fruits of your labor! We'll toss your fresh pasta with the house-made sauce and serve it with grated cheese and Calabrian chili flakes
Class Schedule
- Introduction (10 mins): Welcome, instructor introductions, snacks and beverages
- Dough Making (15 mins): Learn the fundamentals of pasta making, the importance of kneading and resting the dough, and the different flours that can be used, while mixing your own portion of dough
- Ricotta Demonstration (30 mins): A full demonstration of making homemade ricotta, as well as a tasting of the warm cheese and a discussion on tasty store-bought alternatives
- Break (10 mins): Leg stretch and beverage refills at the refreshment station
- Pasta Rolling & Cutting (40 mins): Hands-on experience rolling your dough and hand cutting your noodles.
- Sauce Prep (20 mins): While your pasta is cooked, your instructor will walk you through the preparation of the remaining sauce ingredients and discuss how to properly cook your noodles
- Service & Meal (15 mins): Enjoy your fresh pasta creation tossed in the house-made ricotta sauce
Amenities Included
- Refreshments: Access to a snack counter including house-made non-alcoholic drinks, fruit and charcuterie skewers, dessert, and a Keurig coffee station.
- Tools & Equipment: Individual stations equipped with class aprons and all necessary cooking tools, including pasta machines for use during the class
- Recipes: Every student receives the recipe handouts used in class so this dish can be recreated at home
- Meal: Each student will be served a full plate of the dish prepared in class
Notes:
- Tickets are NON-REFUNDABLE! If you are unable to attend the class, you may transfer the ticket to another person. Tickets are not transferable to another class.
- Doors will open 10 minutes before listed class start time. Students wishing to grab seats together are encouraged to arrive when doors open, otherwise we cannot guarantee reserved seating regardless if tickets were purchased together or not.
