Small Group Workshop: Ultra-Regional Handmade Pasta with Domenica Marchetti

News flash: Not all spaghetti noodles are round. Join guest teacher Domenica Marchetti as she introduces you to Spaghetti alla Chitarra, the signature pasta dish of Abruzzo, a rugged mountainous region in south-central Italy. The name of this hearty pasta translates to “guitar-style” and refers to the unique traditional tool used to make it. With Domenica as your guide, you’ll learn to make the pasta dough by hand, roll it, shape it—don’t worry, she’ll show you how to improvise if you don’t have a chitarra—and cook it perfectly. You’ll also make the highly regional Abruzzese-style ragù traditionally served with the square-cut, toothsome noodles. This sauce is a labor of love that’s made with a mix of meats and ensures nothing in your kitchen goes to waste. As we cook, Domenica will paint a picture of the regional cuisine of Abruzzo, the area where her mother was raised and where she now lives part-time, and will explain the similarities and differences between the signature dishes of this region and those of neighboring areas.
About Domenica: Domenica Marchetti is the author of eight books on Italian home cooking, including The Glorious Pasta of Italy; Preserving Italy: Canning, Curing, Infusing, and Bottling Italian Flavors and Traditions; and, most recently, Williams-Sonoma Everyday Italian. A former newspaper reporter who earned her master’s degree in journalism at Columbia University in New York, Domenica has published articles and recipes in The Washington Post, Eating Well, Fine Cooking, Food and Wine, La Cucina Italiana, Sale e Pepe and other publications. Domenica is a professional recipe developer and cooking class instructor and she leads occasional small-group culinary tours in Italy. She splits her time between Abruzzo, Italy, where her family is from, and Virginia. She also writes the weekly Substack recipe newsletter about Italian home cooking and is currently working on her ninth book, which is all about Italian cookies.

Our small-group Workshops are capped at just 25 attendees and are distinct from our livestream Classes. As such, they are NOT included with Insider membership.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.
