This month's margarita riff is an ode to Narsiso Martinez’s work addressing farm labor, Essential Since 2013. The artist’s use of banana boxes as his medium inspired us to imagine a banana-inspired cocktail. The base is tequila, a nod to the artist’s Mexican heritage, with banana used three ways in the cocktail: we use a caramelized brown sugar and banana syrup, fresh banana in the shaker tin itself, and banana peel infused vermouth. This recipe also highlights sustainability, offering guests a cocktail that uses every single part of the banana. The crème de cacao and cardamom balance provide a great backbone to round out the sweetness from the sugar and banana with the tart lemon.
