As the founder of the beloved Piccolo Sogno, Chef Tony is known for his dedication to simple, high-quality ingredients and traditional techniques that bring the flavors of Italy to life. In this intimate class, Chef Tony will guide you step-by-step through the process of creating classic Sicilian arancini—from preparing perfectly seasoned risotto to stuffing, shaping, breading, and frying each rice ball to golden perfection. Along the way, he’ll share stories, tips, and insights from his years in the kitchen.
Enhancing the experience, Ferrari-Carano Winemaker Natalie West will lead a thoughtfully curated wine tasting, sharing her expertise and passion for winemaking. A Sonoma County native raised on a family vineyard in Dry Creek Valley, Natalie brings over 20 years of experience in viticulture and enology. She currently oversees all white wine production at Ferrari-Carano and will guide guests through wine pairings that perfectly complement Chef Tony’s dishes.
Chef Tony’s passion for restaurant-quality cooking extends beyond his dining room. Mariano’s proudly carries his Piccolo Sogno line of artisanal pasta, signature sauces, extra virgin olive oil, and balsamic vinegar in all stores—making it easy to recreate authentic Italian meals at home.
