An Evening of Modern Syrian Cuisine with Syrian Chef Dima Al Chaar & Ceru
About this Event

We're thrilled to host Silk Road’s journey of exchanging food culture, culinary networking, and connecting Middle Eastern food culture & flavours with the rest of the world. CERU Restaurant is announing collaboration between two modernised cusine where guests will be able to taste of Chef Dima modernised Syrian food and CERU creation of modernisaed Mediterranean and Middle Eastern flavours.

Tickets are £75/head ( food only )

MENU ; Our menu start with a Cold Mezze (small plates) – served for the table

  • Salmon Itch - Aleppian Armenian tabouleh topped with salmon tartare, pickled chili pepper &turnip with toasted sesame seeds
  • Mfasakh Arnabit - Roasted cauliflower steaks, tahini dressing, watercress, walnuts, pomegranate seeds & molasses
  • Hurrak Isba’o - Lentils cooked in tamarind sauce, topped with fried onions, crispy dough garlic coriander salsa
  • Ceru Hamarra - tangy red pepper dip with walnuts and pomegranate molasses – served with freshly baked Greek pita bread (Ceru Specialty)

Hot Mezze (small plates )– served for the table

  • Sujuk Bel Feter - Aleppian sujuk meat filled portobello mushrooms

topped with melted feta & marjoram

  • MsakhanDjej- Sumaccaramelizedonions&chickencrispyrollsservedwithlabnehsumacdip
  • Falafel Kreydes - Falafel shrimp tempura with pickled turnips & tahini dip
  • Sauteed Portobello & Shiitake Mushrooms - With aromatic spices, spring onions, pistachios & tahini labneh (Ceru Specialty)
  • Sticky Roasted Baby Aubergines - With date syrup, tamari dressing, sesame, coriander & pomegranate (Ceru Specialty)

MAIN COURSES – (choose one dish per person)

Vegan Freekkeh - Smoked wheat sautéed with swiss chard, shiitake mushrooms, golden raisins &toasted slivered almonds

Sayadiyet Samak - Roasted fish fillet topped with saffron rice, crispy onions, toasted slivered almonds & seaweed tarator

Roasted Leg of Rabbit - Tender leg of French rabbit with harissa cannellini beans & citrus dressing (Ceru Specialty)

Juniper Rubbed Loin of Venison - Served with green beans, roasted squash & pomegranate dressing (Ceru Specialty)

Desserts – served for the table

Laymouniyet Tout - Orange blossom lemon curd, marinated berries, almond & pistachio crumble Knefet Tefah - Warm apple & cinnamon crispy knefeh cups, served with vanille ice cream

....Inspired by the lore & history of the original Silk Road which extended across the Syrian desert via Palmyra, Chef Dima Al Chaar started this pop-up events 3 years ago, seeking to visit 5 countries every year to spread the beauty & richness of her culture and heritage to the Western world. Her hope is that it will have a lasting impact on future food culture & culinary history. Her main objective is to promote food, spices, culture, and recipes through these events in order to spread their popularity to the West and to exchange food techniques and trends across Europe & America.

......The Silk Road initiative will enable explorers to gain a deeper understanding of Middle Eastern culture and geography. In addition, this journey will lay the foundation for professional culinary exchanges. It will revive the mystery of Middle Eastern cuisine in general and of Syrian cuisine in particular. Meanwhile, precious spices, herbs and forgotten recipes will be reinvented with a modern twist, introducing modern western techniques & arts to the other side of the globe.

  • About Chef Dima; Dima grew up in Syria in the ancient city of Damascus “Du-misk” in Roman which means “very aromatic”. The city has the enchanting aroma of Jasmine flowers in the air and is known for its generosity and hospitality.

Her ambition in life is reviving the Syrian cuisine & food culture with modern ideas and twists; this has derived from her belief that a person’s own roots are always the main motivator for creativity and inspiration “The apple never falls far from the tree”

As a consequence of this; Dima joined Top Chef Middle East program reaching semi final stage to deliver her precious culinary mission on a larger scale.
