From coastal waters to Colorado grain, this guided experience explores how place influences flavor—pairing the concept of an oyster’s merroir with a whiskey’s terroir. The evening begins with a welcome cocktail and a freshly shucked oyster, followed by a guided pairing in our second-story cocktail lounge featuring Laws Four Grain Bourbon and Laws San Luis Valley Rye.
This special Whiskey Wednesday is hosted in collaboration with Martha Boff, founder of , whose mission is to bring high-quality, sustainably sourced oysters and seafood to Colorado. With a background in seafood hospitality and nutrition, Martha brings a thoughtful, approachable perspective to pairing, flavor, and sustainability—creating a true coastal-meets-Colorado experience.
Additional oysters and cocktails will be available for purchase throughout the evening.
