About this Event
Join us for, "Semolina 101: Fregola," a culinary anthropology workshop focused on the coarsely milled durum wheat, semolina flour. In this class, you will learn how to make "fregola," a couscous-like pasta from the Italian island of Sardinia.

WHAT TO EXPECT
- Aperol Spritz upon arrival, of course!
- Engage in a brief, interactive seminar on wheat's ancient origins
- Experience a hands-on lesson on how to make fregola from scratch
- Enjoy your handmade fregola, cooked by chefs Elle Brosh and Amanda Lanza

ABOUT YOUR INSTRUCTORS
Elle Brosh is an LA-based chef, teacher, and the founder of Dadah, a culinary anthropology project dedicated to preserving North Africa's diverse cultural heritage through food. Inspired by her North African roots, years working in hospitality, and her passion for education, Dadah offers history-infused private dining experiences, pop-ups, and cooking workshops that illuminate the often-overlooked, multicultural past of the Maghreb.
Amanda Lanza is a chef and cultural anthropologist; both her culinary and research work focuses on understanding the intersection of culture, cuisine, and dining. Her food and culinary career is rooted in her upbringing in NYC and Italy as well as her time living in Seoul and Greece. She creates playful and layered meals to accompany celebratory parties. Her dishes are grounded in Italian techniques and her experiences cooking around the world.
