Join us at The Gulls Grocery to make some microbial magic in this sauerkraut making workshop!
Sauerkraut is the German name for lacto-fermented cabbage, variations of which are found across Central and Eastern Europe, as well as throughout other cultures around the world. It’s an easy entry point into the world of DIY fermented food. All it takes is cabbage, salt, and a few basic principles in order to enjoy the microbial goodness of kraut!
This workshop, led by Gulls team member River (he/they), will lead you through the basic technique of making your very own jar of sauerkraut. You’ll learn everything you need to prepare your materials, create your blend, and let it mature. You'll also learn how to customise your kraut, with any herbs, spices, and other vegetables you might like to add. We'll talk about some common problems, and how to troubleshoot them too.
We are running this workshop in order to raise money for our Repair Fund! As a small business, we get hit hard when things break down in store. We don't currently have any savings to help when they do. We're running this workshop so we can build a cushion against inevitable wear and tear. We have sliding scale tickets, so you can donate according to your means.
Practical Information
The event will begin in store at 7pm. We expect to finish around 8:30pm.
We will be supplying each person with cabbage and salt, and some extra herbs and spices you may like to add. Please note that you will need to bring some prep equipment!
You will need to bring:
- Approximately 1L kilner jar, or fermenting crock. We will have a few available to purchase on the night, however we won’t have enough for everybody. You can commonly find these jars in charity shops, supermarkets, or home stores like Dunelm.
- A chopping board
- A sharp knife
- A mixing bowl
We will have a few spares available on the night if you can't bring any of these. We will be supplying each person with cabbage and salt.
Accessibility
The event will take place in The Gulls Grocery shop floor, where we have refrigerators which emit a loud hum.
We have overhead fluorescent strip lighting.
There is one large step into the shop, and the shop floor is level. Unfortunately, we do not yet have a ramp.
There is stepped access to a small toilet.
In order to squidge up the cabbage and extract its juices, you’ll need to use your hands, and a bit of elbow grease! If this presents a barrier to participation, please let us know, as River can step in and help with this part.
