About this Event
Elemental Cooking, in collaboration with Tim Teven, presents a grand winter feast where elemental cooking processes give shape to an evening of communion grounded in the soil and season of place. Following the outdoor kitchen during DDW, Theo and Miles build upon their approach to assemble a menu of delicate, rustic and surprising food rooted in the bygone universal practice of natural food preservation and preparation found in the traditions of Catholic fasting cuisine and neolithic Scandinavian and Chinese food preservation. Using flames, smoke, embers and water, the fruits of the landscape coalesce into pickles, smokes, pureés and clay bakes - an edible manifesto for their cooking philosophy.
In the Roman Catholic tradition of advent cuisine, the dinner focuses on fish and refrains from animal products out of fasting. The techniques surrounding this historical food are surprising to the modern chef and hardly compromise on taste, texture or elegance. Our delicate treatment of fish and vegetables contributes to a pallet of diverse textures, sour-crunches and earthiness.
