After get ready to indulge in a culinary experience like no other, featuring a curated 5 course dinner by Chef Alan Moore of Dii IINÀ Culinary. Paired Cocktails featuring Spirits of Compa Spirits by Aspen Bingham and Danielle Goldtooth of Dii IINÀ Culinary. This in-person event promises a fantastic evening filled with great company, amazing flavors, and memorable moments. This dinner is to welcome the newest addition to Dii IINÀ Farm Santos De Arriaga! A beautiful Arabian Horse and some would say Chef Alans new best friend! Santos was born in Angel Fire NM and came to Arizona at 1 years old. After living 18 years with Abel's family, Santos needed to be rehomed and ended up heading back to the Land of Enchantment with Danielle and Alan. Is the saying "It takes a Village to raise a horse?" well, we need our community to help us ensure a safe and happy adjustment for Santos in his new home.
About Dii IINÀ
Dii ÌINA-Culinary is a company started by Danielle Goldtooth and her Husband Chef Alan Moore. They realized the disconnect that most Americans have with their food and decided to start on a journey of food sovereignty. First Danielle Co-owned Wild Arizona Cuisine where their focus was on foraged products of the Sonoran Desert. Then the duo positioned themselves at a small family-owned cattle ranch as a slaughter-woman, butcher, and ranchers. After honing those skills, they learned how to take over Danielle’s family farm on the Dinè Nation in Shiprock NM. While they still help coordinate with family the upkeep of the farm, currently they curate space with a small team of visionaries. Including Aspen Bingham who joined as an owner in 2023. She brings with her an experience from some of the best bars in Arizona, Brand Work, and is in School for Sustainability. This team is dedicated to hospitality and sustainability with a message. The vision is to bring slow food and drinks to the table with a tale of the ingredients, and the people who curated it, from the ground to the plate. . The company is special in it’s belief in building a community for all to share, its love of featuring Indigenous Products, and its use of hyper-local ingredients when possible to make something they call “Steam Corn Punk”.

Our business is all about Mexican wine and spirits - we're pretty obsessed with it. We especially love showcasing small, family-owned companies from all over Mexico. That way, we can bring you a unique selection of amazing drinks that really represents the culture of the country. You've gotta try our agave-based spirits like mezcal and bacanora - they're seriously delicious. And if grape wines are more your thing, don't worry - we've got those too! No matter what you're looking for or what kind of bar or restaurant you have, we've got plenty of options to choose from.
Our mezcal selection includes a range of artisanal brands each with its own distinct flavor profile and production process. We work directly with small mezcal producers in Oaxaca, Durango, Guanajuato Guerrero, and other regions of Mexico to ensure that our products are authentic and of the highest production.
In addition to our spirits, we also offer a variety of Mexican wines, including red, white, and rosé varieties. Our wines come from boutique wineries in Baja California and El Bajio (Guanajuato, Coauhila, San Luis Potossi, Queretaro) and are made from grapes such as Chardonnay, Malbec, Cabernet Sauvignon, and Tempranillo.
