In this work shop you learn how to make 麹 “KOJI”.
■What is Koji?
Koji is a processed product made by propagating koji mold on steamed rice, wheat, soybeans, and other grains. It is used mainly for sake making, miso making, amazake, shio koji, soy sauce, vinegar, mirin, various pickles, preserved foods, and various other fermented foods, which is the basis for the production of fermented foods in Japan. In other words, without koji, Japanese fermented foods cannot be produced.
In this workshop, we will make rice koji, the most common and most frequently used type of koji.
■What is the purpose of this workshop?
The purpose of this workshop is to allow participants to easily make koji at home using common kitchenware, as if it were an extension of cooking.

Learn how to prepare Koji at home
Even beginners will be able to make koji easily.
Get knowledge related to Koji making.

2 .“Miso” Making Workshop
Let’s make your own Miso!!
In this work shop you learn how to make 味噌 “Miso”.
■Do you know Miso?
Do you know MISO? Miso is one of the fundamental Japanese seasonings cherished by the Japanese for centuries. Miso soup, which features miso as a key ingredient, has gained popularity among many foreigners today. but do you know how miso is made? This workshop is designed for those interested in crafting their own miso. By attending this workshop, you will be able to easily make your own miso at home and savor it at your dinner table every day!
To make miso, koji is essential. Koji is a product made by inoculating steamed rice with koji mold; without it, miso cannot be produced. While we sell koji at our store, you also have the option to make it yourself. If you're interested, you can enroll in a separate workshop on koji-making on the same day at 10:30-12:00.
■What is the purpose of this workshop?
You will be able to easily create your own original miso at home. On the day of the workshop, we will use a standard miso recipe, but we will also provide instruction on calculating salt content and koji ratio. This will enable you to experiment with adjusting salt concentration or changing the koji ratio, allowing you to craft your own unique miso.
