Jack Eynon is a first-generation shellfish farmer and founder of Big Cypress Mariculture. Raised in Southwest Florida, his early connection to seafood grew from time spent kayak fishing the Everglades, diving for scallops, and spearfishing the Gulf of Mexico.
His career has spanned hands-on fisheries work and marine policy, including roles as a fishery observer on Louisiana tuna vessels and as an economist with NOAA’s Office of National Marine Sanctuaries. He holds a master’s degree in Environmental Management from Duke University and founded Big Cypress Mariculture in 2023 while working as a research technician at UNC Wilmington’s Shellfish Research Hatchery. Now embedded in a community of oyster growers and seafood advocates, Jack is focused on building a resilient, responsible mariculture operation.
