Throughout the evening, Executive Chef Dustin will present each course, while Eagle Park Brewery Founders Max and Jackson Borgardt share the inspiration and story behind every pairing.

Course 1: Tallow Tot & Caviar, Black Truffle Crème Fraîche, paired with a House Lights lager
Course 2: Skate Wing- Kombu & dulse consommé paired with a Sunny Ray Citrus IPA
Course 3: Ube Duck Salad- Baby mustard greens, Nueske duck breast, compressed Asian pear, candied pecans & blackberry-port gastrique paired with a M.C. Hammerschlagen Oktoberfest
Course 4: Prime Hanging Tender- Duck fat potato pavé paired with an I Can Go for That IPA
Course 5: Espresso Dark Chocolate Ice Cream Sandwich, cocoa nibs & salted caramel ganache paired with a Recombobulation Dark Ale
About Chef Dustin Howard
Chef Dustin trained at the Culinary Institute of America in Hyde Park, New York, and has opened five restaurants across five different states, including a boutique hotel restaurant in Nashville. Before joining Saz's Hospitality Group in 2022, he worked as a corporate chef for another Milwaukee restaurant group and consulted with over 800 restaurants throughout Wisconsin and Michigan. He now serves as Corporate Executive Chef, overseeing all culinary operations for Saz's Hospitality Group.

Founded by brothers Max and Jackson Borgardt along with close friend Jake Dehne, Eagle Park Brewing Company originated from a shared passion for craft beer honed in a garage music studio. What began as homebrewing experiments while playing together in a rock band quickly evolved into one of Wisconsin’s most acclaimed craft breweries.

About the Beers
Each course of the evening is paired with a brew designed to highlight the versatility of Eagle Park’s portfolio. From the imported German malt and hops to a dreamy Oat cream IPA with three different kinds of oats, you’ll be guaranteed to be taken on a flavor journey.
The Venue
South Second is a modern industrial event venue located minutes from downtown Milwaukee. The newly renovated space features a patio with an outdoor bar and balcony overlooking the main dining area. Inside, Edison-style lighting fixtures, exposed brick, and industrial trusses pay homage to the neighborhood's historic character.
