RAIGHINAS — A Sardinian Communal Table

RAIGHINAS means roots in Sardinian.

The kind you continue carrying with you, even after you leave.

On 31 May, Pasta Paradijs will host a long communal table inspired by the Menu Deleddiano, a culinary tradition connected to the dishes and worlds found in the writings of Grazia Deledda, awarded the Nobel Prize in Literature in 1926 and still the only Italian woman to have received it.

The afternoon was born from the desire to bring some of those dishes to Amsterdam without changing what they are.

To cook them with the same rhythm, generosity and sense of hospitality they come from.

The kitchen will be led by Vitalia Scano, who has spent years studying and cooking Sardinian food alongside women who preserved those recipes inside their homes for generations. Her work around Sardinian culinary traditions has received recognition from cultural and regional institutions connected to the preservation of the island’s food heritage. She is also part of the FAO and Women’s Chef Exchange “Flip-the-Script” programme presented at the World Food Forum.

Throughout the afternoon, guests will gather around a shared table shaped by warm pane guttiau, sas cattas, Sardinian cured meats and cheeses, fresh ricotta with honey, handmade pasta, seasonal dishes from the Sardinian countryside and traditional desserts such as s’aranzada.

The wines will be selected and served throughout the afternoon by producer Luisa Camoglio of La Casa di Sophia, whose work is deeply connected to old Carignano vineyards in Sant’Antioco.

Some of the dishes belong directly to the world of Grazia Deledda. Others come from the same Sardinian tables that shaped those stories for generations.
