AdvertisementThe culinary visionaries behind Le Colonial's French-inspired Vietnamese cuisine and global wine program have collaborated in an upscale dining experience in partnership with leading Australian wine producer, Penfolds. On Wednesday, September 15, the restaurant will showcase a collection from Penfold’s wine library complete with a five-course menu curated by Executive Chef Hassan Obaye.
The progressive menu will feature by the glass pairings of numerous varietals, chef selections of sorbets and chef-crafted dishes including Spot Prawn Aquachile with serrano peppers, shallots, lime, yuzu, rau ram infused oil and puffed sesame pastry; Pan Seared Halibut with yuzu beurre blanc and roasted heirloom cauliflower; a slow Lamb and Foie Gras Sando complete with confit garlic, raspberry compote and Japanese sweet potato fries and a decadent Tarte Tatin with Golden delicious apples, puff pastry, caramel and vanilla crème.
The event will be hosted in Le Colonial's sultry upstairs lounge. Guests will be treated to an intimate cocktail reception commencing at 6:00 p.m. featuring hand-passed hors d'oeuvres prior to a seated dinner at 7:00 p.m. The dinner will be led by Le Colonial’s Wine Director and Sommelier, Trevor Wiedeman and include remarks from Penfold Representative, Estefania Barrios and Le Colonial’s Executive Chef Hassan Obaye. Those wishing to continue their evening may attend an after-hours reception to enjoy super-premium offerings of Penfold’s Quantum Cabernet Sauvignon 2018. Tickets begin at $249.99 excluding tax and a 20% gratuity.
