Gongfu tea is a traditional style of tea brewing that utilizes short steep times with small amounts of water in order to experience the development of a tea as the leaves open up. If you're thinking gongfu sounds an awful lot like kungfu, you'd be right! This style is essentially "brewing tea with skill," where your skill expression comes across in the amount of tea you use, how much water, steeping times, and water temperature.
Normally, this process involves a special piece of teaware called a gaiwan, which is a ceramic cup with a lid. But you know what else has a cup and a lid? Coffee to-go cups! No need for expensive ceramics.
Join Dorian for a 2-hour introductory workshop and tea journey where you're the tea master! We'll practice gongfu tea brewing utilizing paper to-go cups, discuss the various teas and how their flavors progress throughout the brewing process, and what techniques to use to find the flavors we're looking for.
